Freezing Cupcakes

Hi
If you have a large order can you freeze the cupcake (without the icing) and ice on the day that it needs to be delivered?

Must the cupcake be wrapped in "cling wrap" film seperately or can you it be all be in a freezer bag together?

Will it still have the same softness and spring to it after defrosting?

I will be using our local baking shops ready mix.

if the cupcakes are only going to be frozen for a couple of weeks then you don't need all the plastic wrap, I have had good luck freezing the cupcakes (with or without the frosting) in just plastic containers such as rubbermade or tupperware. The key to keeping them fresh is freezing right away after baking.

I freeze cupcakes all the time. I freeze them unfrosted and wrap them in plastic wrap annd then put them in a plastic container. I defrost them while they are still wrapped and they still have a great taste and texture.

i've had it happen once where i froze some cupcakes in a plastic freezer bag, then thawed them to room temp (still in bag), and the wrappers began to pull away from the cake. has anyone else had this happen?

i bet it was when i used those cruddy Wilton white paper ones, but i can't remember for sure.

if you left the bag closed then the papers abosorbed to much moisture as they thawed and then seperated, i usually prop open the bag so the moisture doesn't build up in the bag with the cupcakes.

@metria and leily, I have had that happen also and it was with good wrappers that I have spent good money on. I agree with leily it happens because of moisture build up in the bag with the cupcakes. So now when I freeze cupcakes I don't wrap them in plastic (unless they are going to be frozen for months, then you need to wrap them because of the risk of freezer burn) and I slowly defrost them in the fridge. Some of the moisture needs to go back into the cupcake otherwise they will be on the dry side.

Thank you for the great replies. My chocolate cupcakes will be frozen for +/- 1 week, do you suggest that i just freeze in a tupperwear container with the wrappers on and not individually wrapped?
This time of year can have extremely warm day (+/-35degress), should i let it thaw in the fridge with the tupperwear container lid removed?

i almost always use foil cupcake wraps or the rynalds already baked for you, which i think is the same as foil. anyways do you think cuz there foil they would seperate more when defrosting?

I think it depends on the brand cause I've never had problems with the wrapper peeling away. Use a good brand.

Also I just put the cupcakes in an oven tray and seal with cling wrap if it will be frozen for a short period and I've never had problems.

@Louise0303...I would freeze the cupcakes with the paper cupcake wrappers on them, in a tupperware plastic container but not wrapped with any additional plastic. When you remove the cupcakes from the freezer I would put them in the fridge with the lid on the container. Let them defrost in the fridge. When defrosted if there is any moisture on the lid of the container, wipe it off. They should be fine. I would also freeze them as soon as they cool from baking to keep them as moist as possible.
