I would like to be able to go to my kitchen, flip on some tunes, and decorate a cake start to finish without being constantly interrupted. One of the downfalls to working at home is everyone seems to assume you're home, so you're available. So then a cake that should have been done by 5:00 isn't finished until 11:00. And by then, I'm no longer happy.

My tiny tiny kitchen! We have two kitchens in my house the big one is my moms and it is so full of stuff you can't see the counters. The one that is mine is a tiny little thing, in fact the walk in closet is bigger then this kitchen. I have no room for pans or extras!! I have two little counters that all my kitchen gadgets set on. So I have no run to practice my cakes without moving everything on top of my stove so I can work. oh yeah my stove is 100 degrees off try to remember that every time you turn it on to put a cake in heheheh oh the cakes I have burned!!!!

Also the clean up no dishwasher grrr

I have "Hot Hands" which makes the icing get warm, and makes it harder to decorate.

Just about all of the above, except for the kitchen size, mine is fine. But.....I can always see my layers under my fondant, even after damming, and refrigerating. I'll lick the "Damm" problem one day!

For me it is smoothing BC (which is improving since using tonednas recipe), and also, trying to have no creases in my fondant when covering a ball shaped cake. Ugghh! icon_evil.gif Oh! I always seem to mess up the H in Happy Birthday when using BC. icon_confused.gif

Nope. I dont' get those either. I personally think first birthday parties should be illegal because the party is for the parents more than its for the child. If you want to throw yourself a party to celebrate when you gave birth, go for it. Just be honest about it.

Knew one mother who complained because a relative didn't show up at her darling 2 year old's party. She said, "*HE* knows who came and who didn't!" Oh pul-leaze!!! He barely knew there was cake there let alone that it was a party for him AND he wasn't exactly checking people off of the RSVP list in his little hand.

I have the same attitude about little league baseball. It would be a fun sport for the kids if they didnt' allow PARENTS to attend! icon_biggrin.gif

No seriously, trying to get my ganache/buttercream absolutely smooth. It used to be trying to level cakes but my beloved Agbay took care of that!

"But it's just sugar and flour!" I swear if I hear that one more time, I will be posting here for bail money. I can see myself now, "I swear your honor, it was justifiable homicide. I have hit my quota of stupid for my lifetime and unfortunately that was it." I HATE cheap people! They expect to be compensated for the job they do, why is it so unbelievable that I would feel the same? Ugh.

That and uneven fondant. I can't stand it if my fondant isn't perfectly smooth. It drives me crazy!

I actually put this on my website b/c I was annoyed at that mentality:

Its just flour, sugar, and eggs
Although some of the cost for your cake does go to ingredients, the majority is dedicated to the time, talent and resources it takes to make your cake special. From licensing, insurance, taxes and utilities, to research, sketching and creative implementation, your price reflects not only the cost of eggs, flour and sugar, but also the cost of skillfully turning those ingredients into a work of edible art
.

Basically, you're not paying for the eggs, dummy, you're paying for me to turn the eggs into your precious little suzie's 4th bday princess castle cake!!!

Cake decorating in a developing country. Sometimes even basic stuff like powdered sugar and cardboard cake boards and boxes can be hard to come by...and I used to gripe about having to order tylose online back home icon_lol.gif
And of course, humidity. Thankfully, Hurricane Richard didn't cause any damage where we are, but the subsequent 96% humidity and no a/c means our good friend chose a really bad day to have a birthday icon_rolleyes.gif

i dont have Just one.. i have several that are about even.. it Used to be getting the dowels CUT and setting up for a tierd cake.. but got lucky and our local dollar store now carries the large bubble tea like straws and That saved me a LOT of pain and suffering.

now its the continuing not having an oven so i have to get all my gear and supplies together *thank god for tool boxes etc* haul several pans and a very heavy KA out to the car. stop at store to get what i dont have at home.. drive up hill with a car with a quirky left turn problem, to use my inlaws oven- bake as much as i can till i run out of supplies then cover all the cakes with garbage bags so they dont get dirty from stuff in the car (its a dusty area) - repack everything back in the car. drive home- unpack the car and take cakes down narrow hall to freezer on back porch *sigh* are you tired yet? i am and i haven't baked yet! lol

the other is when i'm working on a cake especially buttercream AND trying to pipe words - and someone walks behind me (i have a small kitchen) so when they walk behind me the floor dips- and so do i (it dips just a tiny bit but enough to make a difference).. and there goes my semi sorta ehh decent piping - gone from bad to worse!

Leveling a cake - I want an Agbay badly but for now using the Wilton one...
Clean up is up there too - several times it seems to need to be done, before during and after the process.
My family also does not seem to notice or appreciate the creative process from start to finish at times. From recipes selection to flavor combinations and assembly to the detail work - it is a lot of effort!
And when things go wrong ...UGH!

I don't even have to think about it. Mine is, hands down, trying to get my bc smooth enough. Plan A for fully 2/3 of my cakes are that THIS time, they will not be covered in fondant. Yeah, right, 98% of my cakes end up covered in fondant because I'm unhappy with the bc icon_cry.gif. Whenever I feel like I'm making progress, it seems like I take 2 (or 5) steps backwards. I have tried ALL the tricks, it's just really hard for me.

Mine too! I can see my layers or bulges. It's not all the time, but it's enough to make me want to cry when I do see them. Too much time and effort is spent creating the cakework (artwork) that something like that is hearbreaking.

Biggest one for me is when I have to rush. Like many of you here, Im a bit of a perfectionist, and Ill spend a whole lot of time on one little detail trying to get it just right. Im a hobby baker and I work full time so I try to make sure the cake Im working on isnt due until Sat. or Sun. That way I can pull an all nighter and play around until Im happy with the outcome. But if I have a cake due during the week and I cant stay up all night, I just feel rushed and Im usually not happy with the outcome. The absolute worst is when I have more than one due at a time...and during the week, because I dont know how to say no.

I also try to do all my baking, fondant/gumpaste figures, accents, etc...way ahead of time so I can stretch it out and have as much time to spend on the details as possible. Its probably a good thing I dont do this for a living because Im just not very good at whipping em out in a few hours.
