Just had one of those days? My cakes keep falling and cracking, my icing just doesn't want to colour properly and no matter what I do, the icing just won't crust up icon_cry.gif Ugh, my day sounds like a cake bakin' country song *Oh, my cake fell flat and the icin' won't crust*

Been there, just 2 weeks ago, unfortunately when I was completing a wedding cake.

This happened to me the past Saturday as i was making my sister's wedding cake! The icing would not stick to the cake...it kept falling off icon_evil.gif I was so mad. Then the Damask stencil wasn't working out and the fondant decided to act up too. It was crazy!

yesterday.... stepped back to admire my two FINISHED identical fondant covered with fondant bows/roses 8" cakes for an 80th birthday party (one fruit one carrot) and then realised that one was meant to be a 10"!! AAAAArrrgh, back to the pantry to mix up another cake and start that ball rolling again. On the plus side the cricket team will get a lovely carrot cake to eat tonight.

Now, medusas_touch...if you want it to REALLY be a Country Song it might go like this!

My cake fell flat and my icing won't crust,
So, I got in my pick up truck
"To the grocery or BUST"
Got stopped by a train
and it started to rain
When I got back home
My dog had started to roam
Ate the cake and the icing
Now clean the floor I must!

Happy Baking!

I can add to that song! My oven turned itself off today! Yep - all by itself, while I was baking a half a sheet cake. I checked it at 60 minutes and thought it's awful pale! I'm not sure how long it had been off but when I turn it back on - it was only at 195. So - needless to say - it didn't turn out very good! icon_cry.gif

I think we all have those days some times...just walk away, get a snack and a rest and then come back with renewed energy icon_smile.gif

By "snack" I assume you mean something like a margarita or martini? icon_biggrin.gif

Oh yes...I remember this day well. I was working on my niece's wedding cake and everything that could go wrong...did go wrong. First the buttercream...same recipe I always use...same ingredients I always use, but I cannot get the right consistency to save my soul. Then the fondant...major brain f**t, I tried a different one because I heard so many good things about it. BIG BIG MISTAKE. Never try something new, unless it's for family in the privacy of your own home. Looked like a Charpe *spelling?, chinese wrinkle dog, before it was all said and done, My third tier cracked and I had to mortar it back together, because of course, no time to rebake. I seriously considered leaving it out all together, but I called my niece, and she sounded so disappointed it might be smaller, but said, "just do the best you can do, noone can ask for more then that". Then I was afraid to put the gumpaste flowers on for fear the added weigh might further destroy the cake. With minutes to spare I made it out the door only to find that on one of the hottest days of the year, there was no air conditioning on at the reception hall. So, I sweat bullets the whole time I was assembling the cake...through the entire wedding...and the entire reception. Until the cake was finally cut (while still intact for the most part). It is the chocolate and white cake (square) in my photos. Oh yes...have I ever!
