I had a customer request this cake (http://www.flickr.com/photos/chocolatemoosecakes/2446521697/in/set-72157623402442928/).

I haven't done any sculpting so I'm a little worried. I've tried to contact the original baker, but without luck. I have already baked my cakes (2 9x3 rounded cakes for the top and bottom, and 2 10 inch layers for the middle). I figured I'd get them stacked and then freeze them to carve. Any other ideas?

Also, does anyone else have issues with the cake circles being too small for the cake? I always have to trim my 8" cake circle for my 8" cake, etc. And the next smallest cake circle is too small!

i think you are off to a good start with your cake sizes, it all really depends on the final size of cake that you want to present, or how many servings.
i've carved a few cakes (in photos) and you've listed the most important steps, i might also include some sort of support system-bubble tea straws perhaps and a foam core board covered with saran sandwiched between the layers to add stability might help. just a thought. good luck. would love to see your results i love the tmnt!! thumbs_up.gif
