So What Are You Going To Do With Your Pumpkin?

Now that the stores are carring pumpkin again what is everyone planning to do with it? I can't wait to make pumpkin spice cupcakes!
I just made some pumpkin spice cookies. Yum! Last year I made pumpkin cheesecake...might have to again this year.
I'm doing my own bridal shower cake...pumpkin spice from scratch. I will post if anyone is interested.

Mine will hang around for decoration and after that is done, I'll cut it up, steam it and puree it. I will then put it in zipper lock bags, 2 cups per bag and zip it and freeze it. (A can of pumpkin puree at the store is 15 oz.)
I'll then use it for Pumpkin nut bread, Pumpkin Muffins or my Pumpkin Pie at Thanksgiving.
My DH loves pumpkin soup. My mother-in-law used to make it for all 6 of her kids this time of year.
Boil some elbow noodles and add some 1/2" chunks of fresh pumpkin. Boil pumpkin and noodles until noodles are cooked and pumpkin is tender to the bite. drain off about 1/2 of the water. Add some butter, salt and pepper and milk. Ta Da! Pumpkin Soup! It is very bland, like a squash soup.
(I think this is perhaps a traditional thing in my husbands family. Personally, I don't get as excited about the soup as he does. There is a chance it could be a Polish Recipe, but I'm not sure)
I hate pumpkin anything. No pumpkin pie at our Thanksgiving (much to surprise of co-workers and friends, who can't understand "If no one likes it or eats it, why would I make one? For a centerpiece?") I dont' even like the smell of baked pumpkin anything.
Wow you ladies/men are so good, here in the boring UK all we do is scoop out the middle , toss the middle away and carve a face in the pumpkin, (YAWN)ooh no Ido know someone who makes a fab pumpkin soup, would love some recipes thgough x
Mmmm, I make the best cinnamon pumpkin muffins ever! And, not that I am one, but they are Weight Watcher approved for their point system, not a WW recipe. I don't eat WW anything, but these I and my kids love!

You can't do a darn thing with the carving pumpkins except carve them. I know, I tried to use one for baking and they have NO flavor. If you're going to use fresh pumpkin, make sure you buy the small, dense pie pumpkins. There is NO comparision between the flavor of using fresh vs canned either!! SO GOOD!
The only thing I don't like that is made from pumpkin is pie--I think the texture gets me.
I make a really good pumpkin pie cake with cinnamon cream cheese icing. This is what we have for Thanksgiving instead of pie. In my family half of us like pie and the other half doesn't (including me), but we all like cake. I also will make pumpkin chocolate chip cookies. They're my hubby's favorite.

However, a little pumpkin ravioli with balsamic, walnut and gorgonzola will be prepared soon!

I just made a pumpkin spice cake yesterday, I'm going to fill it with pumpkin cream cheese filling, carve it like a pumpkin, ice it with orange colored cream cheese filling. Fondant accents.
I will be making these for Thanksgiving....pumpkin torte, pumpkin pie, pumpkin roll. I LOVE pumpkin!!!!

Okay, I totally agree with everything you said...EXCEPT bake the seeds! Clean them really good, dry them, toss them in a little olive oil, sprinkle with salt...maybe a little cayenne or seasoning salt and bake! I LOVE pumpkin seeds.
Canned pumpkin will be used to make Paula Deen's Pumpkin Gooey Butter Cake and the carved pumpkin will have it's seeds toasted in butter and rolled with cinnamon and sugar.

I love to make pumpkin everything this time of year! I make my pumpkin pie with some apple butter in it with a gingersnap crust, yum
I LOVE pumpkin! So far I have made pumpkin cookies, pumpkin pancakes and a pumpkin spice cake.
I have wanted to buy one of those small sugar pumpkins but am not real sure how to go about cooking it.

We love pumpkin! I've already made some pumpkin bread, and will be making pumpkin pies for Thanksgiving. The best recipe that I've tried for pumpkin pie is the Libby's recipe. IMO, a lot of people try to do too much to the pumpkin pie (like add too many spices).
I also make a pumpkin cheesecake and my sis makes pumpkin rolls @ Christmas.

Mmmm. I LOVE the way pumpkin baked goods smell. I'm making pumpkin spice muffins, pumpkin cheesecake, and pumpkin pies. I didn't buy canned pumpkin, though. Kroger had the sugar pumpkins on sale the other day for 79 cents so I bought a bunch and put 'em on the porch. They'll be decor for another 2 weeks and then I'll cook 'em up!

Here's a less sweet cream filling that I found on the internet by bdonovan: Measure 1 cup of whole milk into small saucepan. Add 5 tablespoons of sifted flour. (I use Wondra flour. No lumps) Cook on medium heat until thick. Cool. Cream together 1/2 cup (a stick) butter & 1/2 cup shortening till creamy. Add 1/4 tsp. salt, 1 cup sifted powdered sugar and 1 tsp. vanilla. Mix until all ingredients are incorporated. With mixer on slow speed, add the cooled flour mixture one tablespoon at a time. Beat on medium high for 3 - 4 minutes or until mixture has a fluffy-creamy texture.The filling is ready to use. No oozing out the sides of the cakes!

WOW, sounds great. I'm helping out at the local pecan farm here during their season starting in November and they want me to bake/make goodies with pecans. I think I just stumbled upon a winner!! I'll just either sprinkle pecans over the cookie part before I bake or maybe even fold them into the filling. YUMMM
