how do I color...

chocolate? I'm new to the chocolate/candy world. I'm making a sheet cake and want to put the marines insignia on it. I have the mold for the insignia. I just don't know how to go about coloring it in. I did an experimental run last night and made the plaque with white chocolate. I then tried brushing pearl dust on it. I tried it dry and then tried it by mixing it with an extract and it didn't come out well at all. I also tried coloring it in with edible markers and that didn't work at all. My question is how to get some color on this. I dont know if i should just try to get the different colored melts and just attempt to get the colors in the right places inside the mold or if there is a better way to be doing this. Any help at all would be GREATLY appreciated. TIA

You can buy pre made colored candy melts from Wilton,Merckens and a few other companies but if all you have is white you can color them with Candy colors which are oil based.You can't really use gel pastes because they are water based and can sieze the chocolate.

I use the wilton colors all the time.Fast and easy!!

yes, just buy the precolored chocolate when possible. if you're ever in a bind and can't get to the store or order online in time, use your gel colors. the chocoalte will seize, but just add some vegetable oil and stir and it will thin right back out again icon_smile.gif

You could "paint" the parts of the insignia in the mold with the colored chocolate, then let it set up in the freezer/fridge, and pour the white on top of that.
