So I'm going to be making red velvet cake for the first time. Im a alittle nervous about it because i usually use a doctored cake mix. but i know red velvet must be made from scratch!
I'm going to be covering this cake with fondant and when I cover a cake with fondant I never refrigerate it. The red velvet recipe calls for buttermilk. Does that mean this cake has to be refrigerated?

No, it doesn't need to be refrigerated. But, red velvet can be a doctored mix...you don't HAVE to make a scratch cake. I make a doctored mix cake from yellow cake, and I get wonderful feedback. You can make it with buttermilk or sour cream. I have also adapted WASC for red velvet with great results as well. If you make a cream cheese filling, it does need to be refrigerated, but if you are using the more traditional vanilla buttercream, it does not need to go in the fridge at all.

Wow Trixie thanks for responding. Would you care to share your recipe for your doctored yellow cake mix to become red velvet cake? I would absolutely appreciate it! I plan to use a cream cheese sleeve filling which does not require refrigeration. Have you ever tried it? is it good?
