What is the maximum heigth you would recommend for a single tier cake?
The cake layers will be less than half an inch and the filling same thickness. 9 inches diameter for the cake
Could I make it as high as 6 inches or even more?

You only need doweling to support upper tiers. For a single (multiple) layered cake that is torted very thin several times with filling just as thick as the cake, you need those clear acetate cake collars to wrap around your cake sides to hold it all together. You can make it 6" or more if you can find the strips that wide, but I've only seen 4" wide.
