I have an engagement party in November and the lady has requested Vanilla cupcakes with a vanilla cutting cake for the top.

Can anyone help me please with a recipe for the perfect vanilla cupcake, moist, light and fluffy?

Any help very much appreciated?

Hi
I always use the wasc recipe, and instead of adding almond extract, I just use vanilla extract. I also bake at 400 for five minutes, and turn oven down to 325 and finish baking. You get nice dome tops on the cupcakes. Also, cakejournal.com has a good vanilla cupcake recipe. I made them once, but I thought they were alittle too dense. You can also try replacing some of the liquid in the batter with either Torani French Vanilla syrup, or french vanilla coffee creamer. Both are really good.

I also use the WASC recipe but I use it with a yellow cake mix, whole eggs, and a tablespoon of pure vanilla for the flavoring.
