Help With Coconut Cake Filling

HI!

I need some help please. I have a small wedding cake on 10/16 and the bride wants coconut filling. The cake will be covered in fondant and will be kept in A/C most of the time. Does anyone have a coconut filling that will not spoil and that will be willing to share it? Please help!!!! icon_cry.gif

I would add toasted coconut and a little coconut extract to pastry cream or if you think the texture would be an issue just flavor it. Toasted coconut mixed into buttercream is good too, don't like it untoasted, feels chewy.

I have done it a couple different ways. One is with coconut pudding, but I use instant and don't use all of the milk, only abuout a cup and half of it, will be really thick, then you could lighten with whipped cream. However if it is something that is not going to be fridged then I say go with a buttercream and replace the vanillla/butter flavorings with almond and coconut, also add a bit of the flavor to your cake. Add toasted cocount to the filling portion. The only other thing I can think of is doing like a German Chocolate Coconut topping with the nuts and stuff, I love this stuff and it is yummy, however don't add nuts in case of allergies.

My all time favorite coconut filling is one 14oz. package of coconut, and one can of sweetened condensed milk. I like to chop up the coconut in a food processor so it's in smaller pieces (not quite so stringy). Mix the two together... and you're done. It's similar to the filling in a Mounds or Almond Joy candy bar. I always get lots of compliments. Very Yummy! thumbs_up.gif

That sounds sooooo yummy. I can eat sweetened condensed milk with a spoon. I bet this would be awesome filling for a chocolate cake. Guess I'll be in the kitchen today experimenting! Thanks! thumbs_up.gif
