If i am going to make a buttercream with butter, shortening and milk, can i leave it out of the fridge for a day or do i have to refrigerate it? Thanks.
If you are dealing with extremely hot weather, the frosting can melt -- which is not a good look! -- but it will not "spoil" at all.
The high sugar content inhibits bacteria from growing and prevents the dairy content from turning bad. No matter how long it sits out.
Hi there! I am pretty much a newbie at this, but because I live in south florida I have been reluctant to put my cakes in the fridge because of the humidity. I don't usually cover my cakes in fondant, just the BC (which has whipping cream and butter in it) with fondant accents. However I didn't want them to melt. I just decorate the day before and turn the air pretty chilly in the house and let my cake sit over night. My customers have told me that the cakes still lasted about a good week after that!
