Help! Wedding Cake Layers Uneven... Trim Or Frost??

My bottom 12" cake layers are uneven.. Meaning the top of the 2 layers is smaller...so there is a difference in size. I didnt notice until I filled and stacked them. So my question is... do I frost and try to cover it up with the frosting? OR try to trim the bottom layer? Im using the Crusting Buttercream for the icing..... Help!

Also, Does anyone have advice on what to do about the middle filling between the 2 layers showing up? I have had this problem on alot of my layer cakes when you can see the middle on the outside of the cake...do I just need more icing? And, if I already applied icing for this cake and it is starting to crust already can I add more?????

Any Help would be great!!... Im new at this and this is only my 2nd wedding cake.

Are you creating a dam of stiff butter cream for your filling to help prevent it from bulging out? And do you let your cakes settle?

Well, if you trim the bottom layer, the tier will be short. Unless you trim it off in one piece, then you can add it to the top.

It all sounds like a big headache to me. No one is going to care that the two layers are not exactly the same height.

Ditto dchockeyguy's questions.

I wouldn't recommend trying to add fresh icing to icing that has already crusted. You're better off scraping it all off and starting over.

Any Help would be great!!... Im new at this and this is only my 2nd wedding cake.




I'm only a novice hobby caker, BUT if I were face with such a dilemma I'd be tempted to frost and then try to get the sides even. If you start cutting now you risk ruining the cake layer or making it really uneven .
