Anyone Interested In Re-Starting The Great Scratch Off?
Decorating By durell87 Updated 30 Sep 2010 , 1:06am by Lita829
I would be really intrested in re starting the great scratch off if anyone else is intrested! Since we've done yellow and choclate I was thinking carrot, lemon, or strawberry. Or maybe even a white choc or spice cake lol oh the possibilites. What do u all think? Anyone ready for a scratch off?
Count me in! I would do this. I think carrot or spice would be great choices since fall is just starting.
Stacey
Alright!
I will bake a lemon cake in a couple of days. I'm going to use this white cake recipe: http://allrecipes.com/Recipe/Heavenly-White-Cake/Detail.aspx
using lemon extract instead of almond. As well as a tsp of lemon zest. Fill it with lemon curd and frost with lemon curd IMBC. I'll tell you how it goes!
If we can get a couple more votes for which flavor to go for that'd be great! I'm leaning toward lemon because a carrot cake one had previously been started but not much results. Maybe someone who were in the fifst bakeoffs offer any advice on how to get this thing started!

Oh, I would love to be part of this. All flavors mentioned are great, but I was thinking of spice cake (or carrot) as well. It would be perfect for the season. And if we are trying to come up with some sort of voting for a cake flavor. My first choice would be spice cake, 2nd, carrot and 3rd lemon.
Thanks for bringing this up again!!!
No question is a stupid question. A scratch-off is when we all submit SCRATCH recipes of a certain flavor or category and personally select 2-3 to sample and evaluate. All recipes should be represented in the selection process. We then post and tally our results on CC to declare the winning recipe. We had rules to govern the Scratch-off to make sure it was fair and that the evaluations weren't too cruel.
I was a participant in the original scratch-offs in summer '09. It was fun and kept us all busy.
I think I might participate again.
That sounds like fun! I honestly don't do a lot of scratch baking, I use a lot of cake mixes, sometimes doctored sometimes not. Trying to work on that, though, so this would be great. One cake I WON'T use a mix for is Carrot Cake. I have a recipe I've been using for years, and it's SO good!
ok so these are the original rules posted by lita for the great yellow scratch off i just changed the dates a little bit
Hi Everyone. Here are the deadlines for the Great Scratch-Off...Yellow Cakes for the month of June:
sept 30th: All ...?.. Cake Recipes MUST be in for entry into the Scratch-Off. Your selection of the recipes you are going to sample must be in by this time, also.
oct 30th: All results must be posted, including pictures, if possible.
Nov 5th: The results will be tabulated and a winner will be chosen. We can choose someone to be the tabulator.
Rules
1. Please have entries in by the deadline for each month.
2. Each participant must try at least 2 recipes.
3. We should try to have all recipes sampled by at least one person. If someone posts more than one recipe into scratch off, then at least one of their recipes must be chosen.
4. Please have your "results" posts in by the deadline to have your input included.
5. Be honest, but not cruel, with your critique of the recipe.
6. Please follow the recipe and don't make substitutions for ingredients. The recipes can be halved, cut in thirds, or quartered if needed.
Judging Criteria
1. Flavor
2. Texture/Crumb
3. Moistness
3. Ease of Recipe
4. Cost of Recipe
5. Ability to convert into cupcakes
After you comment on all these characteristics, give the recipe an overall score ranging from "0" for Terrible Sad to "10" for Excellent Very Happy . You can make a suggestion on how the recipe can be improved, if needed, if you want.
Here is the original link to the yellow as well http://cakecentral.com/modules.php?name=Forums&file=viewtopic&t=633981&postdays=0&postorder=asc&&start=0
so what do you all think? we ok with the dates and rules? any additions or subtractions or questions? Everyone down to do a spice cake?
oh and i think they also added in moisture after 3 days as a judging criteria as well!
so does that all make sense?
basically anyone who wants to submits there fav recipie for the type of cake were doing then once everyone has picked two recipies to bake and try you give a rating for the recipies you baked in each catagory as well as an overall score which will be tabulated at the end to find the very best of the scratch recipies!
sounds fun!
This is my first time participating, so I hope this does not seem like a dumb question. I understand that I should follow the recipe. How about the baking temp.? I usually bake at 325 even if recipes say 350. What have you done in the past? I'm not picky, I have no problem baking at 350, I just want to make sure I do things the right way!
adavag- i dont really have a prob with it as long as you mention it in your critique and do both the cakes the same way. Maybe lita can shed some light on this as well since she participated in the last one. I dont usually bake anything as high or as long as the recipie calls for but i think it might have to do with my oven running hotter than it should. I feel like the ingredients are the most important part as far as staying true to the original recipie
im excited! i hope some more ppl join so we can get a good range like they did with the yellow scratch off! man i read that whole thread it took so long but so worth it! it was filled with all sorts of information!
Sounds good to me! I vote for this month's Scratch-Off to be Spice Cakes. I have excellent Pumpkin Spice Cake recipe that I want to submit.
Adevag, I agree with Durell, its ok to change the baking temp...just state what temp and how long you baked the cake in your critique. I tend to do the same thing with certain cakes. We also stated if the recipe was appropriate for cupcakes and if it was halved, quartered..etc.
I will be watching, I can't participate but I loved the Yellow Cake and Chocolate cake offs! :]
At some point, could we think about doing a cheesecake scratch off if we have enough interest?
Are you guys going to start a new thread for the scratch off, if so make sure you post a link on this thread so that people can find it a bit easier! :]
I'm excited to see what happens, I've never baked any of the three suggestions!

I'd LOVE to do a cheesecake scratch-off. We started to do one last year but it was voted out. I used to make cheese cakes all the time but I haven't made one several years. Hmmmm.... the perfect reason to break out those blocks of Philly
I also agree, that once the flavor is chosen, we should assign someone to be lead and that person should start a new thread on Oct 1st. We could submit the recipes in this thread and paste them in the new one, under the rules and regulations.
In addition to a lead, we will need a tabulator, and someone to build a spreadsheet of the results.
I don't mean to take over . I just wanted to give a little input on what worked well for us last year.
Yay so spice cake it is! That's perfect cause I've never made a spice cake either so this will help me choose my perfect go to recipie for the holidays! Id say because of the title of this thread id probably start a new one but I will def link it up to this one! U guys can start entering recipies whenever u like and ill make up the final list evryone can sign up for and ill post it on the new thread . Prob start working on everything tonight after the munchkins in bed lol
Lita, at least we've got someone who has done it in the past working with us because it can get chaotic really fast with these things! :]
As far as the cheesecake thread, I think it would be great! :] I don't have a particular cheesecake recipe, I also don't know which is better as far as baking or water bath, that would be so much fun!
ETA: Sorry Durell, I was typing as you were submitting your post!
Spice cake it is! After the recipes are submitted I may choose one and bake with y'all!
Cool. Is is ok for the spice cake to contain pumpkin or does it have to be only spices? If Pumpkin Spice Cake is ok...I'd like to submit this recipe:
http://www.williams-sonoma.com/recipe/spiced-pumpkin-cake.html
I can't wait! This is going to be sooo much fun
It's where there is a specific date that (in this case spice cake) a specific flavor cake recipe has to be submitted by, and then everyone bakes one or more of the recipes and "grades" it based on specific guidelines and in the end the results are posted as to which recipes were graded the best.
What is a scratch off?
I don't mean to be mean but it is all explained in earlier posts in this thread....I believe on page 1. After you read about what it is, if you have any questions, any of us will be happy to answer them. I hope you join us. The more the merrier
Sorry lita I think u posted while I was typing mine lol! But ll ur input is greatly appreciated I'm so happy to have ppl who know how to do this thing! Ya if anyone else wants to lead or whatever I'm a good sharer lol I just really wanted to get one going again! Id say pumpkin is fine unless someone else has any probs with it
This is the recipe I would like to submit.
It is a buttermilk Spice Cake:
http://www.foodnetwork.com/recipes/emeril-lagasse/buttermilk-spice-cake-with-roasted-walnut-cream-cheese-frosting-recipe/index.html
I cant wait to get started If I should post the actual recipe instead of the link, pls let me know and I'll be sure to do so.

Naaahhhh.....I'll chill. I'll just participate. Thanks for getting it going again
I would like to participate, but do I have to submit a recipe? Or do I bake something that is going to be posted and then talk about it?
(if this was already addressed, my apologies and please point me in the right direction to the answer. )
Thank you
Ok jess u can submit a recipie but I don't believe u have to in order to participate. Once all the recipies r in ill post a new thread with them listed then u can sign up for any two or more u would like to bake and judge and compare! If u can have some other ppl try and compare them as well that's even better and ur family is usually happy to help lol. If ur able to take a pic of the cake and its crumb as well that's awesome just so everyone can see what it looks like.
Did that answer ur questions?
