Hi
This is my 1st post on here so here it goes.
My sister has asked me to do her some cupcakes like this for her birthday and wondered what you use on top to make them peak and not flop or melt
Hope you can help

Are you asking how to make frosting? Or how to pipe frosting in a swirl?

More the frosting than the swirl. I need a piping bag for swirl dont I? And a peak on the bun to get that shape or does the bun need to be flat

Hi
You need decorator bags, couplers and tips to make the swirl. Depending on your cupcake flavors, you can use buttercream, bettercreme, IMBC, SMBC, or cream cheese. Welcome to cake central by the way. If you are looking for suggestions or help, is this where you will find it. I hope this helps you out. Also, if you are going to fill your cupcakes, you can use the same for filling and topping your cupcake. To fill and ice at the same time, you can either use an apple corer to scoop out alittle of the cupcake, and fill and top, or you can just stick the tip down into the cupcake, and fill and top at the same time. Do you know what flavor cupcakes you are baking? Also, for good cupcake combos you can look up a thread called Bettercreme Fun in the cupcakes forum. Lots of good ideas there. Good luck.

The IMBC looks like what am after does that stay firm and not melt like normal butercream. Am thinking at the moment just doing her plain buns but I will have a check through the bettercreme fun and see if I can get any ideas

Hi
IMBC is made with pure butter. It does melt in heat. You can look up buttercream recipes in the recipe section that uses half butter and half shortening. Personally, the easiest and better tasting is the Bettercreme. You purchase it in a frozen liquid form, and you just whip it up in your Kitchen Aid mixer with the whisk attachment or with a hand mixer. You can either get it in chocolate or vanilla. I use both for cupcakes, and I add flavoring to the vanilla, like raspberry, butter rum, banana, strawberry. Its really good. I don't have a Sam's Club near me, but I have seen other people mention that they buy the premixed there. To fill and top I can buy it at a Bakers Supply in Long Island, NY. Another one is called Instant Whip, which tastes just like whipped cream, and you can flavor it also. Really delicious. Works the same way, you just have to whip it up.
