I just made the heavenly pumpkin cake, and was going to use a praline filling but the customer changed her mind and asked if I had anything other then plain buttercream and praline, I have always made praline icon_sad.gif does anyone have another filling recipe that will pare good with pumpkin?

How about a cream cheese filling? How about some nut flavored buttercream filling, Walnut or pecan?

Agree with previous cream cheese suggestion. As a variation, maybe make it spiced (cinnamon, ginger, allspice). A brown sugar frosting would be good as well.

I have a question about perishable fillings. If I have to finish a cake by saturday I usually bake the cakes Thursday morning. let them cool, tort and fill. I let them settle outside the fridge on thrusday night. Friday i decorate and try to have it finished. I usually do this with a crisco filling because i know that it wont go bad if left out several days. I would love to do a cream cheese filling but would i be able to do my usual routine or have to tort, fill and decorate the same day to keep the filling from going bad?
