I know there's the wilton chart, but I don't think that it is realistic in comparison to people's expectations. Somehow serving size is very subjective. I was asked to provide a cake to feed 75. I'm going back and forth on how much cake to make. My sheet cakes are 2 layers of cake with a filling, approx. 3.5 to 4" tall. I was planning on putting 2 9x13's together. Do you think that will feed 75? I want to be sure to provide enough but not have an abundance of cake left over.

Thanks!

What do you think people's expectations are? I mean... if you don't think the Wilton chart is realistic, what is? Some cakers like larger portions than the industry standard of 1x2x4, but non-caker people typically don't have a clue and you need to tell them exactly what a serving size is. I understand that some people think the Wilton chart portions might not serve enough people, but you seem to be the exception expecting the opposite that the chart will serve much more. (unless I'm misunderstanding you.)

2 9x13 (layers) together serves 50 (if you meant stacked)
2 9x13 (two-layer cakes) together serves 100 (if you meant pushed together side by side)
or, a two layer 11x15 serves 74.

No, I'm not the exception. I don't think the wilton charts serve enough. When I look at how big 2 9x13's pushed toghether will be, I don't think it looks like you could get 75 servings out of it. And I should clarify that I'm talking party cake servings. Every birthday party I have ever been to, they cut and serve pieces much larger than the wilton guidelines. I know that I shouldn't feel like that's my problem, but I do.

I was always afraid, too, that the Wilton party charts would not be sufficient.
But I have finally come to realize that they are! I used to really give too much cake. It did take me a while to "trust the charts"

It is also helpful if you give people instructions on how to cut the cake. That is esp. true of using Indydebi's method for round cakes. People want to cut those dang wedges and then that is when they don't get enough cake.

Yes, people do cut their home-made 9X13 still- in- the- pan cakes very large - but that's because they are not a full 2" (or 4")
