Hello icon_smile.gif just wondering if anybody had any suggestions for me on how to store a fondant cake after it is made. I am making a 8",10", & 12" round stacked cake. The cake needs to be done on Friday and needs to be at the party on Saturday do I put the entire cake in the refrigerator. Or is it better to assembly the cake before the party at the location of the party. THanks

It doesn't need to go in the fridge unless you're using fillings that need to be refrigerated.

You can stack it at home, box it up and transport it that way, or you can take the tiers to the location and assemble there. It depends on how comfortable you are with stacking, what kind of supports you're using, etc. I like to stack onsite but sometimes I'm not delivering (my sister always wants cake but she lives 100 miles from me, so she can come and get it if she wants it that bad). When I need to transport a cake already stacked, I use a large moving box with a piece of nonskid drawer liner in the bottom, and I use a center dowel in the cake. Another piece of drawer liner goes in the vehicle, under the box. So far that's always worked for me icon_biggrin.gif

haha, just transported a fondant cake 8 hours for a wedding. from class, it was definitely stated that fondant didn't need to go in to the fridge... from ppl worried about food poisoning, we placed it in the fridge then we transported the 8 inch in an electric cooler, the 12 inch was styrofoam so no worries there. i'd recommend stacking once you get there and putting all removable parts on once there. if you hit a bump of have to brake hard, the layers could go for a slide (happened to one of my customers for a wedding cake....)

we actually placed the 8 inch cake with cake board on a 10 inch cake board using doublesided tape just in case the 8 inch slide so it wouldn't hit the side. for other cakes, i have an assortment of boxes for transporting.
