Hello
I dont have isomalt so i want to use normal granulated sugar. Can you assist with the technique?

How hot must the sugar be when pouring over the ice blocks
and
What colouring is best to use? Gel, Liquid or powder?

How long should it set for before i break it out of the bowl?

Any other tips will also be appreciated.

It doesn't take long for the sugar to set. THe ice will cool it down so quickly it can be removed in only a couple of minutes.

Do not use liquid color, as you don't want to add the water back into your mix. Use gel or powder for the coloring.
