Hi, I'm kinda new to the cake biz and I was wondering if someone could help. I love my crusting bc frosting recipe but our local bakery's offer the smooth, beautiful, fluffy, non-crusting frosting. Some of my clients want to order this since it is what they are use to paying for. Does anyone have that "bakery" frosting recipe?? Thanks

i too like my crusting BC because it hold up so well with all the decorating that goes onto a cake.
ive had that smooth creamy frosting you are describing and would love to know how to make it.

You also might want to try SMBC or IMBC both are absolutely fantastic but very heat sensative.

Are you talking about Whipped Icing? Called Bettercreme? This is the icing that tasted like Cool Whip. It is very common in bigger bakeries. I purchase mine through Sam's Club. I just walk in, go to the bakery and ask for a bucket of it. Its $19.63 or something.

If they like whipped cream frosting, you can get Pastry Pride. Depending where you are in the country (I'm in San Diego) it may be called be a couple of different names like Frostin' Pride or Rich's. It is frozen in one quart milk cartons and you whip it with your blender until it makes a shelf stable whipped cream frosting that is delicious!! If you have a Smart and Final in your neck of the woods, you can find it in their freezer section. I seriously cannot imagine anyone not liking this stuff; it is fabulous. You'd probably be better off doing any decorations in crusting BC and placing on the Pastry Pride iced cake.
