My daughter needs to eat gluten free and I was wondering if there are any cake/cupcake recipes that are gluten free. Also, does anyone know of a good gluten free website where you can ask questions. Please help. Thanks

In Canada - The Bulk Barn and large grocery stores sell gluten free cake mixes and icing sugar.. by "El Peto" There site also has some yummy recipes on El Peto, and the boxes come with some too. In the Recipe section here there are gluten free icing recipes!

Betty Crocker is making gluten free cake mixes that are available at regular grocery stores.

For more general gluten free recipes, including desserts (not necessarily cake) check out the Crockpot 365 blog (google it). She has a wealth of kid-friendly gluten free recipes.

There are a lot of websites out there for gluten free foods. I had to make a gluten free cake for the first time about a month ago and it turned out great! Just watch out for the "hidden" gluten in additives such as Triticate, Spelt, Mir or Farina (AKA Far or Farro) . You can use Pam original - but NOT Pam baking. You can start with these sites:

The Betty Crocker mixes are pretty good. So are the Pamela's brand. A good place to start is the local health food store. These days there's lots of pre-made gluten free mixes out there that are yummy.

I'm on a gluten free diet also. I have had great success with the hershey's chocolate cake recipe that comes on the back of the cocoa box. I Substitute 2C gluten free flour mix + 1tsp Xanthan gum(or 1C rice flour, 1/2 C tapioca flour, 1/2C potato starch, 1tsp Xanthan gum) for the flour called for in the recipe.

I also made some coconut cupcakes with the betty crocker mix this week that turned out yummy. They had a very mild coconut flavor.

1 GF betty crocker yellow cake mix
1 box vanilla pudding
1 can (14 oz Coconut milk
1/2 C shredded coconut
3 egg whites(beaten until stiff and folded in at the end of mixing)
Baked at 350 for 25 to 30 min.

Also if you can't find gf stuff in your area, amazon.com has a lot of gf items. You have to buy it by the case though, so be sure it's something you like first. Unfortunately not all gf foods commercially available are edible, imo.

Quite often you can substitute regular flour with a combination of potato starch flour, white rice flour, and tapioca flour- it makes for a nice soft texture (other gf flours can be gritty).
GF all purpose flour is good too, but I still mix in some of the above to soften it out.
Best way to do it is just try out the substitutions you like the best, using your favorite recipes.
Make sure to use pure vanilla, and cocoa that is gf as well.

Bob's Red Mill makes a nice GF flour, as well as a chocolate cake mix you can try out.

My husband has celiacs and I always make him the chocolate cake recipe from the whole foods website, www.wholefoodsmarket.com. Go to recipes then type in flourless chocolate cake, or you can scroll down to gluten free recipes. It is absolutely amazing and has become my favorite cake! It is very rich and fudgy!
