I have seven cake orders for this week. I delivered one yesterday, so that makes eight in one week. Most of these are due Saturday with one due Friday. Give me some of your tips to get all of these done in a timely manner while keeping organized. What do you guys do when you have many orders due for one day. I have already baked the cakes and frozen them and I have made the fondant characters.

I make a table with the days of the week across the top and the client names down the left side. Then I fill in what needs to be done on each cake each day working backwards from delivery. This way I know what components need to be done in advance as well as whether or not I'm on track.
