coral reef out of sugar

Does anyone know how to make a coral reef out of sugar? You pour the sugar over ice.

I think this technique is used with isomalt not straight sugar.

i've done in multiple times! just take a basic candy making sugar recipe (like for lollipops) and get it to a hard crack stage. have your crushed ice ready to go in largish tupperware bowls...maybe 4 bowls. then have your containers that you're going to tint the sugar in ready to go too. pour your sugar into the containers and quickly color them (a tiny bit of gel colors does the trick). then pour each container into its own tupperware over the ice. the ice will melt and you'll be left with really cool looking coral! break it if you need smaller pieces. just be sure to let it drain really well on racks before you apply to cake or the color will bleed icon_smile.gif

I wasn't thinking about this but was reading posts and found it. That is GREAT information and something I will remember to use if I make a beach, underwater cake. Love your cake with that!

Here is one of my pieces I did. Coral reef is poured sugar over rounded ice.. the best kind looks like little tubes with holes through them. I never have great luck with just ice from the freezer. If I am going to do a large sculpture with bubbled ice, I buy bags of ice from the market.
