I am getting ready to take a stab at making MMF. I was reading the instructions and it says to let it rest overnight. Is this the case...Do you have to let it rest overnight? TIA

I think the article on MMF says to let it rest an hour or so to cool down the melted marshmallows. I've used MMF the same day I've made it before.

It is good to let it rest a bit, however, I have used it right away in an emergency. resting helps all the sugar to settle into a nice dough. I leave it at least 1/2 hour, then knead it a bit to make sure it isn't sticky.

Grease your bowl and your hands to make it easier to handle. Don't try to incorporate every granule of sugar. I hold back some to use for kneading or in case it isn't required. I turn the mass with a spoon until it really won't stir, then dump the whole lot onto the counter.

Some sift, some don't. If the powdered sugar is fresh and doesn't seem lumpy, I use a whisk to make sure it is relatively lump free.

I make a mess, but it is really easy to make MMF.
