When to stack?

Hi everyone,

Just a little question .... i've made and marzipan and iced (fondant) three sponge cakes for a wedding which is on Saturday (3 days time) I iced them yesterday, should I stack them on the day or can I do it now? They have started to go hard now.
I am planning to travel with them stacked as its only a 5 minute drive to the venue. I've travelled with them stacked before and they've been fine.

They're ready now? You guys do things differently in the UK!
I would have covered and stacked them on Friday for a Saturday wedding. What's your support system?

Ah well, normally I would leave it to a day or two before but time isnt on my side as I work full time and I have to do overtime thursday and friday. icon_sad.gif I'm sure they will be fine though.

I use plastic dowels to stack with. Seems to work for me.
