removing cheesecake from bottom of pan?

Can anyone share their ideas on how to easily transfer a cheesecake with graham cracker crust from the bottom of a springform pan to the cake platter? I am afraid I will break the crust. Thanks!

i double line with foil, then spray with nonstick spray, then i also double the foil on the outside due to the water bath. once done, i initially take off the outside foil, let set up in the pan in the frig overnight and then remove the inner foil the next day--no breakage! hope this helps icon_smile.gif

thank you!!! I have one problem, I have already baked it icon_sad.gif I will definitely do that in the future. I am nervous about getting this one off correctly. I dont have enough time to rebake one for delivery tomorrow. icon_redface.gif

Make sure the cheesecake is nice and cold - remove it from the frig, take a knife and run around the inside edge between the cheesecake and the pan, then dip the bottom of the pan into hot water and it will release. I make cheesecakes in a regular cake pan and this is how I remove them from the pan. (if you're using a springform pan, make sure to leave the foil on the outside of the pan when dipping it into the hot water)

For me, using a regular cake pan, I put a piece of saran wrap on top of the cheesecake before dipping it, then I flip it out and immediately turn it back over. It doesn't even leave a handprint (as long as it is well chilled first!)

great thanks! I am going to do this, one more quick question.... How long do I dip in hot water? is it quick or does it sit there for a minute? Thank you!

I use a small steak knife and run it around the top edge of the cheesecake and the pan and remove the side. The I take my cake knife and gently place it under one side of the crust and turn the pan in a circle until the crust has been removed from the bottom of the pan. Using the cake knife lift the edge of the cheesecake and slide it on your serving platter or cardboard circle.

thank you thank you thank you!!!! I combined both tricks, I ran a knife around the sides, then dipped the pan in hot water for about 30 seconds, then I took a cake knife and went under it until it was free from the pan and PERFECT! not a crumb missing off my crust! Thank you all for the help! Next time I will be sure to use foil underneath. icon_smile.gif
