Oatmeal Cookies

Does anyone have a DELICIOUS oatmeal cookie recipe? I've tried on- the -box recipes and they taste LIKE THE BOX - uck! If no new recipe maybe some pointers on improving what I have? Thanks.

I always make the one on the Quaker Oats box and get rave reviews.

I'm trying to replicate the Bouchon Bakery oatmeal cookie. It has an unusual mix of raisins, no nuts and a touch of molasses - 1 tsp. They sell the mix at Williams Sonoma.

I have found for oatmeal raisin cookies this trick: I bring the raisins to a boil for about 3-5 min. I drain them, and spread them on a kitchen towel to towel dry them. I then put them in a sifter with flour and sift them. The flour helps them not to sink in the batter and the soaking in hot water plumps them up.

If you need a recipe, let me know and I can send you 2 of them that I use.

This is a great recipe!

Oatmeal Toffee Cookies


Ingredients:
1 cup (2 sticks) butter or margarine, softened
2 eggs
2 cups packed light brown sugar
2 teaspoons vanilla extract
1-3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups quick-cooking oats
1-1/3 cups (8-oz. pkg.) HEATH BITS 'O BRICKLE Toffee Bits
1 cup MOUNDS Sweetened Coconut Flakes (optional)

Directions:
Heat oven to 375°F. Lightly grease cookie sheet(I used a silpat, I never grease cookie sheets). Beat butter, eggs, brown sugar and vanilla until well blended. Add flour, baking soda, cinnamon and salt; beat until blended.

Stir in oats, toffee bits and coconut, if desired, with spoon. Drop dough by rounded teaspoons about 2 inches apart onto prepared sheet.

Bake 8 to 10 minutes or until edges are lightly browned. Cool 1 minute; remove to wire rack. About 4 dozen cookies.

They are awesome with the coconut! I suggest baking these on parchment or a silpat.

Me too with one slight change. Sub out some of the butter for applesauce (i.e take out 1/3 or 1/4 cup of butter and add 1/3 or 1/4 cup of applesauce).

Mine also got RAVE reviews because they came out soft and not all hard and crunchy; people seemed to just love the soft oatmeals for a change.

When I lived in Akron, Ohio (where Quaker Oats started), they had a small shopping center in the old factory and had a shop that baked the cookies. I always thought they were so much better than the recipe on the box. Their secret- they mixed the batter up the day before and refrigerated it overnight!! Makes a moister cookie.

I grew up in Akron and remeber those cookies well here is the recipie would be difficult to adapt the recipie on the box to get this one. Enjoy!



Quaker Square's Famous Oatmeal Cookies

Approx 5 doz
ingredients
  3/4 cup vegetable shortening
  1/2 cup granulated sugar
  1/4 cup water
  3 cups uncooked oats
  1 tsp salt
  1 cup firmly packed brown sugar
  1 egg
  1 tsp vanilla
  1 cup all purpose flour
  1/2 tsp baking soda
directions
  1. Preheat oven to 350°.
  2 Beat together shortening, sugars, egg, water, and vanilla until creamy. Combine remaining ingredients and add to sugar/egg mixture. Mix well.
  3 Drop by rounded teaspoons onto greased cookie sheet.
  4. Bake at 350° for 12-15 minutes.
