My Buttercream Won't Crust - Help

I am using sugarshack's buttercream, which I have always used with no problems. With the humidity at 100% today I can't get the buttercream to crust. My gumpaste bow, which was completely dry, now has drops of moisture on it. I'm about ready to give up on wedding cakes in the summer. Thanks for listening.

I'm so sorry to hear that!

Is it too late to scrape off and try again? Don't give up on summer-time cakes, it's the most popular time of the year to get hitched! When you get the chance, maybe try the ganache method? I found using ganache instead of BC in the summer has helped keep my cakes solid despite the scorching heat.

Did you put the cake in the fridge at any point?

No cake in the fridge. It was frozen, but took it out and let it thaw overnight, filled, let it rest over night and then I decorated today. I think I'm going to give Indydebi's BC a try in the future. Heard her buttercream will crust no matter what.

I have certainly never had a problem with Indydebi's buttercream crusting. I live in Arkansas where we're infamous for our hot and humid summers.
Give it a try...it has never let me down. thumbs_up.gif

It always crust within 5-10 minutes too....which I love. thumbs_up.gif

I love Indydebi's buttercream....I've never had a problem with it.

Just an update. Cake is delivered (that is another whole story). No one was there to receive the cake, so I hope that I did everything to their liking. Learned a lot from this cake, but glad that it is over.

I used Indydebi's recipe for the first time yesterday and I have to admit I loved it. I am strictly a Swiss meringue buttercream person but with the heat and humidity I was having failure after failure. I will be using Debi's recipe until the weather cools down! Your cake turned out lovely by the way.

bettinashoe...I started using Indydebi's recipe for the same reasons. I use to swear I'd never use an all shortening based buttercream...until I tried her recipe.

I know, I can't believe the humidity up here in the NE these past two days. It is like living in a rain forest.

Good news is that it supposed to pass soon. Seeing I live in NY and get your weather the next day, I hope it gets nicer for you too.

I took cupcakes with cream cheese buttercream icing to a party today. They were out in the shade so they were okay, and didn't last long either icon_wink.gif. But the frosting was definitely on the very soft side. There is no way it would have worked for anything fancy like wedding cake and fondant and anything like that.
