Chocolate Mff Gone Bad, Ready To Cry, Long

So the day before yesterday I decide to make MFF for the first time.... Need Brown fondant for a 3 tier baby shower cake due sat..

Make fondant (check)
Let it rest (check)

Im thinking everything is great (little did I know that it wasn't) so this morning I pull it out to check it out (flavor and all).. OMG!!! It taste like it has TOOO much of some thing. I spend all day thinking about it.

While on my attempt to make the White Chocolate MFF, (for coloring the decor) I realize "VANILLA" Its got WAAAY TOO MUCH. SO i get my ingredients out to start on the white batch...and suddenly it all comes together.

Instead of putting 2 tsp of vanilla I put 2 tbs of vanilla....so im thinking "it dont taste that bad, Im going to use it anyway...tapedshut.gif (the cakes for a friend, im doing it for the practice) I kknow my dear friends will understand.

I got to roll it out and it seems very soft and sticky.. I knead more sugar , still to soft so i knead more sure... ok its firming up... Im getting ready to roll it out but its seams to be sticking to everything, my hands, the table, the rolling pin, everything...

I didnt want to use those 2 batches any way.
-yes i said 2, made the mistake 2 times in a row back to back

At this point I am ready to cry, but laughng at my own stupidity. icon_confused.gif

I chunked it all in the trash, and am going to start fresh in the am, which means tomorrow i have to make more fondant, cut out all the decor, tend to my 3 kids ( one that just happen to get strep throat this week), base ball party from 3-6, and normal mommie, mommie, mommie stuff.

I feel like giving in to the cry cry cry stage...and i just had to tell some one who understands and feels the same about baking and decorating as me.

Cornstarch. I make about 10 batches of MFF each week and I absolutely love that stuff. I use alot of cornstarch when rolling it out and it isn't sticky at all. I won't use any other fondant myself. Sorry that this happened to you.

Oh I am so sorry that happened to you. I feel your pain, I have done silly things like that on a few occasions. I hate those bad cake days. May the cake angels be with you tomorrow!!!

@ Mammawrobin. for MFF I should roll out with cornstarch?

For MMF I roll out on Crisco mostly. Maybe thats part of another reason it seemed so sticky.. I try'd to roll it out on pwdr sugar first and when that didnt work, i try'd Crisco.

Yes. Cornstarch. MFF LOVES cornstarch. icon_lol.gif I've had to go to Wal-Mart at 2 am to get cornstarch before covering a cake because I cannot use this fondant without it. It is absolutely the best I've ever used for workability but it just demands cornstarch icon_lol.gif I do use quite a bit of Crisco when I first take it from the mixer, getting it ready to wrap in plastic to rest but after that I use cornstarch.

Mamawrobin, I still have not made my first MFF, but am hoping to do it this weekend, as I have a cake I need to cover for next weekend. I sure wish you lived closer so you could come and watch over me while I do this!

You know I would thumbs_up.gif I told my daughter earlier that I want her to help me make a tutorial (she can run the camera) on making MFF. I have had only good results and maybe a few photos with some of the steps would help some of you that are having issues or are making it for the first time.

I second mamawrobin on the cornstarch. Way back when I first started using it I would use PS to roll it out. It made the fondant dry and hard to work with. Someone on here mentioned using cornstarch so I gave it a try. Never had a problem since. I hope your next batch works out better for you!

Go under "recipes" and "make your own fondant". Its MFF used the double broiler way vs microwave. It helped me a lot.

I so prefer using the microwave over the double boiler....but thanks for posting this...maybe it will help someone that's having issues.

MFF- Stands for Michelle Foster Fondant?

I thought it stood for Marshmellow Fondant.

Well now I'm even more confused however at least I learned to use cornstarch instead of powdered sugar.

I've only made MMF and had OK results. How does this compare? I would love to have a more forgiving, flexible (for lack of a better word) fondant.

Oh you poor baby! Hugs. I know just how you feel. I've so been there. Stupid mistake, tired, more stupid mistakes, so tired, give up, go to bed, wake up in a time crunch because of stupid mistakes, TIRED, wanna cry! It stinks! Chin up. Cake on.

BTW - thanks everyone for the cornstarch tip. I always use PS because I figure its part of the recipe, why add cornstarch? But your comments have convinced me to give it a try.
