Pricing A Damask Topsy Turvy Cake. Any Help Is Welcomed.

I don't usually like asking for pricing info, but I am a bit stumped on this one.

I have a set price for topsy turvy cakes but the client wants a damask design. How much extra do you charge for this design? How do you price it? by servings or just an additinal $XX.XX amount.

I personally usually charge by my base prices plus extra per serving for how much work....so...like if a regular fondant cake starts for me at $4/serving (plain with a ribbon) then I'd add cost for whatever work...say $1/serving for the damask and another $1/serving for the topsy which ends up being about $6/serving...I think a range between $6-$7/serving would be about right for my area.

I think round cakes are much harder to stencil than square cakes...so however you are doing the damask, take into account how hard it will be. If you are doing fondant cutouts, that's very time consuming.

Thanks! So, one more question....I gather from reading the comments on the picture in Kitagirl's album, that this is done with a stencil. Is it done with royal icing?

Some people do their damask with cutters but I think that sounds too time consuming!

Yes its royal icing spread over a stencil and lifted off. I suggest you practice before doing it....its tricky on a round cake, I find.....and I think a topsy cake would be slightly more challenging.

LOL - trust me, I'd be practicing, a lot, before attempting anything like that on a cake.

I was just going to ask if damask would even look good on a topsy cake? I did a search on google and didnt seem to find any.

It seems it would lose the perfection i see in it (damask.)
