Can I Freeze A Topsy Turvy Cake That Has Been Carved?

I am making my first topsy turvy cake next Sunday. I will be out of town Friday and Saturday, so I was hoping to carve, fill the cake, dirty ice it, and wrap it in saran wrap and foil. This will save me time so I can just decorate on Sunday. Will that work out okay? I have never frozen a cake after it's been frosted, so I wasn't sure.
Also, do I just let it defrost in the wrappings and then cover it in fondant?

It will be fine. Are you planning on crumb coating the cake and adding the final layer of frosting after it has defrosted? I would carve, fill and crumb coat the cakes. Wrap them in plastic wrap and place in the freezer. When you are ready to decorate the cakes take them out of the freezer and either let them thaw in the fridge with the plastic on overnight or leave them on the counter with the plastic on for at least two hours. You need to make sure that your cakes are completely defrosted before decorating otherwise you take a chance on having issues with the frosting not sticking or sliding later on.
