Peanut Butter Frosting?

Looking for a peanut butter frosting recipe that isn't very heavy. Want something light, smooth, and creamy to top chocolate cupcakes with. I saw the recipe for peanut butter mousse in the recipe section, but it doesn't mention if it can be used as a frosting, or just a filling. . . .but something along those lines. . any suggestions?

Here's mine and it is awesome!! My customers LOVE it:

1 cup peanut butter
1/2 cup butter, softened
4 cups confectioners' sugar
1/3 cup heavy cream

The Cake Doctor has a great one. I use it alot. Easy and Soooo Delicious. Here you go:

1 cup of peanut butter- I use creamy
8 Tablespoons or 1 stick of room temp butter
2 cups of Confectionary sugar
3 or 4 tablespoons of whole milk
2 teaspoons of pure vanilla extract

Place the peanut butter and butter in a mixin bowl. Blend with electric mixer on low speed. , until fluffy, 30 seconds, Stop . Add confection. sugar and milk and the vanilla. Blend on low for a minute, beat on medium until fluffy. If needed add a little more milk. This is great for fillings or frosting a delicious dark chocolate cake. Good luck icon_biggrin.gif

This is my peanut butter buttercream recipe:

2 cups of Sweetex
3 sticks of softened butter
1 tablespoon of vanilla extract
1 cup of creamy peanut butter
1 cup of melted white chocolate
2 cups of confectionary sugar

Cream together butter and Sweetex until smooth. Add hot melted hot white chocolate (I melt for a minute and a half in the microwave). Scrape down sides of bowl and add peanut butter. Whip on high speed until blended well. Turn mixture down and add confectionary sugar all at once. Mix until well blended.If mixture is too thick milk may be added to thin it. Turn mixure on high until creamy.

do you just throw it all in a mixer and let er rip? or an order of
operations?

Does this work under fondant? Isotope shelf stable?

If you make smbc or imbc, you just add peanut butter to that after you incorporate the smbc or imbc and it is so delicious. It is definetly light and not heavy. Can be used under fondant. hth

That sounds easy enough.. icon_smile.gif How much peanut butter (approximately) do you put in? I am thinking 1 part peanut butter/4 parts smbc.. what do you think? too much/too little?

I made Indydebi's BC recipe this weekend - cutting the shortening in half - and adding in that amount of Peanut Butter

Its hard to measure out dividing 1 1/3 cups in half ... so just eye it, it will be close enough.

This worked well under fondant as well!

That is a good recipe, however I was looking for a shelf stable recipe all that dairy I'd be afraid to leave it out.

Are you aware that you can turn off that option on your telephone, that makes the phone guess what you want it to say? It's a HORRIBLE feature.
