First-Time Buttercream Maker, Can You Help Me?
Decorating By ChimbleySweets Updated 1 Jul 2010 , 5:16pm by mindydaile
I'm making my own birthday cake (that sounds more depressing than it is, LOL..it was my idea, I'm sick of storebought cake), and I just got through making my very first batch of buttercream ever. Now I am trying to decide whether or not I need to refrigerate it.
I wanted to use Indydebi's recipe, since I've read nothing but excellent reviews, but the stores here either don't carry Dream Whip, or don't have it in stock..So I ended up having to just do without it.
Basically, I used 1 1/3 cup of Crisco, 2 lbs of powdered sugar, and the only liquid I used was Bailey's Irish Cream. I know that Indydebi's normal recipe is used by many of you without refrigeration, but I was wondering if the addition of Baileys as opposed to the milk it normally has in it would in some way change the makeup of the icing in a way that requires refrigeration? (I scoured the threads, but didn't see this addressed). I'm a germaphobe (think Howie Mandel ), so I wanted to make sure it would be safe before I just left it on the counter overnight. I'll be icing and covering the cake with fondant tomorrow to eat Friday.
Thank you guys so much!!
If it's they coffee creamer (Bailey;s make one, just in case you haven't seen it yet). It doesn't have to be. If your talking alcohol I'm not sure.
Well none of the ingredients you used need refrigeration to begin with and Baileys does not need to be refrigerated either. It's alcohol so nothing to spoil.
I hate to tell you this but without the Dream Whip it isn't Indydebi's buttercream. The addition of Dream Whip IS what makes her icing different from the "standard" buttercream. So..you really didn't make Indydebi's buttercream.
Do you have Wal-Mart? That's where I buy my Dream Whip. You should try making her recipe again using all of the ingredients called for. The Dream Whip is essential for the icing to be "humidity friendly".
To answer you question..no your buttercream does not need to be refrigerated.
Yes, I looked at our local grocery store, at Walmart, Michaels, and just didn't see it anywhere. I'll see if I can find some on Amazon and just have it shipped here.
But thanks for letting me know about the refrigeration
Just so you know, Dream Whip is a name brand of dry topping mix. Other brands work just as well. Another brand is GFS, Gordon Food Service, it works fine. Hope this helps.
kroger has their own brand name of this product also. Little cheaper than dream whip. I get that a lot. hth

You're welcome. Where did you look for it in Wal-Mart? It's above the jello on the cake mix aisle in all of the Wal-Marts where I shop. The others are right that you can use any "powdered whipped topping mix" Dream Whip is just the brand name. Just thought you may have missed it at Wal-Mart not checking in the right place.
Where are you located?
We're in a relatively small city in South Texas. I might have overlooked it, but I tried both the cake section and the jello section. I'll try looking for some of the off brand kind, because maybe they just didn't have the name brand for some reason.
I had a hard time finding it in my small town as well until I stumbled upon it by accident one day...
In my store (and since then I've seen it in the same place in other stores) it is right next to the pre-made graham cracker crusts. In the same aisle as the jello but not "right next to" or "right above" the jello which is where I was looking at first.
