It depends on the filling!!! What kind of filling are you going to use?

Provided it is NOT filled with something perishable, it will be perfectly fine.

If you've filled it with frosting that is safe at room temp (as most BC's are) and covered it with that type of frosting, you will be just fine.

I once frosted and covered a cake with fondant on a Thurs. that wasn't eaten until Sat. It was totally moist and fresh tasting. Fondant is a great cake preserver!

CakesbyCarla is right - it should be just fine. If you're leaving it in the hands of someone else until Saturday, just be sure that person knows how to take care of it. For example, if you don't want it refrigerated, they should know that. Some people would immediately assume it should be socked into the fridge. Good luck!

The cake should be fine and even moist. The only problem is that the fondant will harden. To prevent this I place a cardboard box over cake and then cover with a new, clean trash bag.

Kimbordeaux...wouldn't the fondant get too soft if you covered it? Maybe it should be left a little bit open underneath? icon_confused.gif

Soledad,
I guess it would all depend on type of cake, filling, icing and type of fondant you are using. I find homemade fondant doesn't dry out as fast but I use mostly Satin Ice and it usually starts drying out before I'm through decorating. Maybe its where I live also but, I've never had a problem with too soft fondant, always the opposite.
