I have been using Wilton fondant and find it reliable but I need to roll it out quite thick for it not to tear. For tall cakes this is no good due to weight.
I have also used Satin Ice and find it drys out way to fast and cracks almost immediately.
I would like to know what's a good fondant for rolling out thin and getting that sharp edge without tearing.
What do the professionals use?

I used to use Wilton as well but I just took a class with a girl who has been on the Food Network Challenges and she uses Fondex. It is SO nice!! It tastes way better and it much easier to use. I bought a whole bucket of it. Good Luck!
I use FondX for covering cakes! It tastes nice and does not dry as quickly as Satin Ice.
BUT FondX doesn't do super great for dried decorations...I think Satin Ice is much better for bows and other stuff like that.
I'm curious why you have problems with Satin Ice cracking and drying. In my experience, Satin Ice is much more pliable than Wilton. It is very stretchy and I can roll it quite thin. Wilton is the dryer fondant and more prone to cracking.
I don't think Wilton is the choice of most pros because of the taste. I like Satin Ice and Pettinice but have discovered MMF and LOVE IT much more than the ready made fondants.
Just recently tried Jennifer Dontz's recipe (Pettinice with white choco. mixed in) and it taste's great but I like how Fondx works a little better for me.

Fondx. The chocolate is really good and it's not too bad to work with. I'm just not an expert on fondant.
Michele Fosters fondant is the best recipe! great tasting and easy to work with.
