Is today the only day you could do it? If nothing else you could bake the cake and freeze then thaw and decorate on Saturday.

Sorry to sound snitty, but the first thought that crossed my mind was, doesn't it have to be ok, whether you are there or not? icon_wink.gif

I would say it depends on what you are covering the cake with, how the temperature is where you are and if you can refridgerate it etc

But if you want to be on the safe side, I would do it no more than 2 - 3 days in advance.

I hope you find an answer that helps you.

If there is anyway that you could hold off and bake it Thursday at the earliest, Friday being better it should be ok.

I have done little experiments here at my house. Day 4 is Okaaaaay, day 3 is better. And that is frosted with SMBC if that is any help.
