I had a yummy key lime cupcake at a cupcake shop last week and decided to make a cake! I ended up with a delicious combination!

I made Paula Deen's Key Lime Cake http://www.recipezaar.com/recipe/Key-Lime-Cake-With-White-Chocolate-Frosting-Paula-Deen-304828

except I substituted sour cream for the buttermilk. It was a super moist cake with a light key lime flavor. Then for the filling I used a key lime buttercream that I found here on CC. For the frosting I used IndyDebi's BC. What a delicious combination! I sent the cake with my husband to his work and all the Key Lime lovers went crazy for this cake.

So if you are looking for an excellent Key Lime (scratch) cake, I highly recommend! thumbs_up.gif

Wow, thanks for this, Maria925! Just a question: how different are key limes from regular limes? I live in Mexico, where the limes are small and the flavor is quite strong (about twice as strong as lemon juice, I'd say). Could I use these to make this cake? It sounds SO good.

Haha! I just googled the difference between regular limes and key limes, and I believe that the ones we get in Mexico ARE key limes, hooray. Our limes are small, greenish-yellow to yellow when ripe and they grow on bushes or shortish trees that have very thorny branches - it sounds just like the description they gave on the keylime website! Hot dog, I'm off to try one out, because I just bought a big bag of limes at the store.

Marianna I was going to say that even though I live in Florida, the bag of key limes i bought says they are from Mexico so I guess you are in luck...LOL! I actually wanted to cheat a little and buy a bottle of Key Lime juice (even though the recipe calls for fresh), but they were out so....squeezing those little bitty limes is a little annoying icon_smile.gif

America's Test Kitchen just did a test on key limes to see if you really needed to use them in key lime recipe. The testers unanimously determined that while the key limes had a slightly different flavor, it was no where near worth the expense and squeezing time. They said regular limes really were just as good. The only thing to avoid, they said, was bottled juice.

You know I once made these Key Lime bars and I used regular lime juice instead. I couldn't tell the difference and no one else seemed to either as they loved them. It's probably one of those things where maybe side by side there is a notable difference, but once you add in all the other ingredients not so much. I think next time I make the cake I might just try regular limes...much easier to squeeze icon_wink.gif

I actually didn't use the white chocolate frosting. I used Indydebi's BC instead and then used a Key Lime BC for the filling. I wanted it to have more of a Key Lime Pie type flavor (which has whipped cream on it) so the white chocolate frosting didn't appeal to me.

Personally I don't think I would like the flavor combo of milk chocolate with the Key Lime. But that's just my taste buds icon_smile.gif

Slightly off topic (i call it my spiritual gift ha ha) but i made a key lime dessert once and found using a pair of metal kitchen tongs to squeeze those teeny limes helped alot! I just stuck it in the middle and squeezed on both sides over a bowl.... then i turned the lime and squeezed again to get as much juice out as possible.

hope that helps anyone who like to use key limes!

AHow much sour cream did you use instead of buttermilk because I love using sour cream in cake?
