Hey all! I have an idea for cupcakes and I was hoping someone could give me some thoughts on it. How does this sound:

White cupcakes with cherry pie filling inside of them with a cream cheese frosting.

I am trying to make like a cherry cheese cake kind of cupcake.

I might even put both the cherry filling and some of the cream cheese frosting inside the cupcakes.

any thoughts??

How did you get the cherry pie filling in the center of the cupcakes?

I bought a can of cherry pie filling and just used the stuff the cherries were in. I put it into a piping bag with a wilton tip #3. I just poked the tip into the cupcakes and filled them that way. It was soooo yummy!

I used just the juice part (it is thick like a filling), The cherries just wouldn't fit through the teeny piping hole haha. It works perfect with the just the jiuce part and then you have all those darn cherries to figure out what to do with hint hint yum! They did taste fantastic! Let us all know how yours worked out!! icon_surprised.gif)

I fill the cupcakes by making a hole in the center using my apple corer. It makes a perfect round hole and I spoon in the cherries. Devils food cake/cherry filling/cream cheese icing.. White almond cake/peach filling/almond buttercream.. ok, time to turn on the oven... icon_biggrin.gif

Those do sound delicious! I think I would put the cherries part of the filling in the food processor then stir them back in to thr rest of the filling (seems like it would be easier to see how fine the cherries were without making the entire filling stuffs blurpy (that's slurpy with burps(air)).

and the icing...fold in some whipped cream or bettercreme....I feel my thighs quivering now!

i do something similar with brownies. everytime i make them and take then somewhere, they are GONE. i use a mini muffin pan and use brownie mix and fill the wells and bake, when they come out, press the centers in to make an indention, let cool, and turn them out. mix up cheescake mix, or cream cheese frosting and swirl into the indentions and top with a cherry or two from canned pie filling. YUMMY!!!! another yummy version, cappachino brownie bites. use cream cheese frosting and mix in a dash of instant coffee that has been dissolved in a tiny bit of warm water, or use some really strong coffee, fill in the brownies, grate some chocolate or sprinkle on some cocao powder and tada, more goodness!!!!

For my son's birthday he wanted fudgy brownie bites topped with popcorn (I used screaming yellow zonkers but you could use fiddle faddle too) Then I drizzled chocolate ganache and caramel over the top of the popcorn. Oh man were they good! They had a salty, sweet, crunchy, fudginess to them that made them irresistible to me!
