Tuesday I finish up my chemo and radiation and want to give the nurses a cake for everything they have done for me. (We all know nurses really run the show, not the doctors icon_wink.gif )

I am beyond tired so I dont want to fiddle with fondant or any real decorating. I was thinking of something that looked old fashioned and "frothy" if you know what I mean.

Call it chemo brain, but my mind is completely empty of ideas that would taste good, be simple, and have "summer" flavors.

Any ideas? Simple and tasty is the key!

Thanks so much.

old fashioned and easy:

lemon bars

lemon pound or bundt cake with lemon icing glaze.

lemon sheet cake -- torted and filled with sliced strawberries and stabilized whipped creme and more whipped cream all over the top.

any kind of cake with fresh strawberries or blueberries or raspberries.

Going for old fashioned here. . .

What about a dump cake baked in a disposable foil pan with whipped cream. Sometimes easy wins out, what could be easier than some gooey fruit with a buttery crust and whipped cream.

When you get fully recovered you can wow them with a fancy decorated creation.

Glad to hear you made it through such a tough time and how thoughtful of you to do that for the nurses!
What about a carrot cake with dreamy creamy white chocolate cream cheese icing (in recipes)? Or just plain ol' cream cheese icing? Carrots are summery. You could bake the cake and slap on the icing to make it look frothy, maybe adding a few little icing carrots here and there - easy peasy!
Red velvet is also old fashioned and goes great with that cream cheese recipe, but it's not really summery or too easy....

Congrats on completing your treatment!! Thanks so much for acknowledging that nurses "run the show". All the nurses that I've worked with love chocolate! I know that they will appreciate anything (and it doesn't have to be cake). Chocolate chip cookies, muffins, cupcakes are some other favorites. You could just send a thank-you card. Those mean so much!

What works best on my unit is cookies, cupcakes, brownies and pizza. Anything hand-sized, portable and utensil-less disappears faster than Harry Houdini ever did.

Congrats on the 'chemo calendar' not ruling your life anymore and thanks for the recognition about nurses responsibilities. The best reward I've ever received as a nurse is when I happen to see a former patient back in life...at the grocery store, restaurant with their family, in street clothes, looking healthy and happy, I can't describe the feeling but its wonderful.

how about....

1 box chewy brownie mix

1 bag peanut butter chips

1 bag dark chocolate chips.

1 disposable foil 9x13 pan

optional: chopped walnuts (regular or black) or pecans to go in the batter or sprinkled on top or better yet: both in and on top!!!
-------

make brownie mix per package instructions.

stir in peanut butter chips

put in pan and bake.

fresh from oven (still hot hot hot) pour on dark chocolate chips allowing them to melt and then spread into smooth coating.

cool.

cut -- serve -- put the lbs on the hips! icon_rolleyes.gif
