Hi, I make my own MM Fondant at home and never had trouble but lately it's been getting wet as I work on it ... at first it is fine but then starts getting wet. I had to turn the AC on AND a fan...is it the humidity and the changes in the temperature and humidity in the air? Is there any advice you can give me to remedy this??? thanks

I have also learned the trick to use a little corn starch. It does the same as ps, but you need less of it.

Corn starch will work, but it will also dry out the fondant to the point of cracking once on the cake.

Thanks everyone! i did several experiments with the leftover batch of MMF i had and found out what the problem was. It's the fact that because of the drastic changes in temperature and humidity btw my house and the fridge, when I take the cake out from the fridge, it was sweating a lot...if i left it out long enough it would dry out. I didn't really have to put the cake in the fridge but because it was sweating as I started working on it I freaked out. Now I know...In the winter putting it in the fridge makes no problems b/c i think the humidity differences are so small. Summer? unless I have perishables like a fruit filling, I'll just leave it outside...thanks for all your comments!

sorry for your headache! icon_sad.gif I find when I use CS with my fondant it seems to stick to it! when I use PS however it made it smoother icon_biggrin.gif BUT icon_cry.gif when I used the PS it cracked the fondant the same! So I pray when you've or I have figured it out we'll notify each-other, k icon_lol.gif gsj
