Question for all of you that bake and freeze.
I find that when I thaw the cupcakes, the tops end up all sticky. I freeze them wrapped in plastic wrap after they have completely cooled. I have to remove the plastic while they are still frozen or it takes the top of the cupcake off when I unwrap them.
Does this happen to anybody else? Does anybody have any solutions to prevent this. I need to make a large order of cupcakes and I want to make them a week in advance and thaw and decorate them the day before they are needed.

They are still sticky after you remove the plastic wrap from them (before they are thawed?)
If your cupcakes are wrapped and the plastic wrap (or ziploc bag that some people use) are touching the top and there is no airflow around the cupcake while it thaws, then yes the top will get sticky. The condensation from thawing has to go somewhere, and if they're wrapped there is no air movement around them to pull that moisture away.
No I actually take the plastic wrap off while they are still frozen as soon as I take them out of the freezer. They still end up sticky maybe my home is too humid.
It is Ok if I am icing the entire top but if I just want to put on a swirl or something that isn't going all the way to the edge you can see that it is shiny and sticky looking.
This happens to some of my cupcakes as well. What I've done in the past is to wipe the top of cupcake with paper towel to absorb moisture before piping which seems to work. I do find some recipes are more prone than others though.
Same here, kirigami. I have 200 cupcakes to do for next weekend. I have never frozen cupcakes so I froze one last week and took it out this morning just to see how it would do. I took the plastic wrap off and let it sit on the counter until it thawed. When it thawed, the top was so sticky---if you touched it with your finger the top would come off on your finger. I, too, am only doing a swirl on the top and am worried about the sticky edges and also if the icing will even stay on or will it peel off. The paper towel sticks to the cupcake and peels off the smooth edge. Does anyone else have any other solutions?
I freeze them all the time, but I usually put them in the plastic cupcake containers and then freeze instead of putting plastic wrap directly on the cupcake. Then I take them from the freezer and just frost them in the container (while still frozen). Never had a problem. Mine too get gooey, but if you frost them while frozen, it doesn't seem to cause any problems whatsoever. I've also had so many that I couldn't fit them all in the freezer in those cupcake containers, so I have put the plastic wrap on them, but I remove it while still frozen and frost while still frozen. mmmm. the sticky part is the best. mine are sticky most of the time regardless of freezing or not. mine are really moist so i figured that goes with the territory. the icing will stick.
so to prevent freezing if using plastic wrap, take off plastic wrap before thawing.... correct?
my cupcakes are always sticky on top. NO PROBLEM. I ice, decorate , very good and moist.
