I made a cake for the Ceo at my husbands company. It was supposed to be for this morning. My husband just called me and told me the the Ceo isn't there today and that she now wants to do it on Wednesday. This is a free cake that I did because when the Ceo asks for something it scores brownie points for my husband. Needless to say, my husband is very upset. It was a huge cake. It has 4 DH 3D durable cake mixes, 2 batches of Indy Debi's icing, 2 batches of MMF and 4 batches of RKT. So, my question is, What the heck do I do with it? Will it last until Wednesday? Should I keep it in the refrigerator? Will the RKT or the MMF melt off the cake while it's coming back up to room temp? What about freezing it? And how long will it take to thaw? And can I even do that with MMF? UGH! HELP! The top 1 inch of the cake is the RKT. It's also painted with silver dust, but I don't think that will make a difference.

Wow that is insane. How can she just blow off something and excpect you to still do a cake on a different date. I would be livid. I dont know what refridgeration would do to all the different things. Im very new to this cake decorating stuff.

How rude.....Knowing me, I'd just be smashing it somewhere to make myself feel better but I definitely wouldn't remake it and unfortunately for her I'd be double booked for the next 5 years and even unable to do a cookie if she asked for one.
If (big IF here) you are willing to make it again... it is absolutely acceptable to inform the CEO that you are not in the position to donate the ingredient cost, or the labor cost a second time. Your husband should be prepared with numbers: cost of ingredients and materials, number of man hours, and an hourly rate that you "normally" charge. Put the ball back in her court and let her decide if she really wants the cake.
A CEO knows the cost of doing business. Most wouldn't expect a one time only vendor to absorb the cost of their schedule change (only if they did high volume would they expect that type of consideration.)
If she is willing to pay, you can be a star and "fit her in."
If you don't have a box big enough, you can put it straight into the freezer for a couple of hours until frozen. Once frozen, take it out and wrap in plactic wrap and put it back in the freezer. Freezing it first will help prevent damage to the finish. Thaw in the wrappers, then carefully remove once all condensation is gone. HTH! Good luck!

I agree with this. No way to know how close to its prime it will be, or how well the structure will withstand this. But I think it's your best bet...short of redoing it all next week.
But before you do that, who is in charge of the party...the one rescheduling until Wed? I'm not clear that it is the CEO as everyone is assuming. I would let that person know that the cake was a big expense and a lot of work and that you really can't remake it next week. Let her know that cake isn't really good a week later. She may not realize what this rescheduling is causing for you and may be able to at least move it up to Monday.
I'd take it to her(CEO) for HER to store it. I wouldn't put it in the fridge for 4 or 5 days.

That's a toughie! Unless it is a dire family emergency that just happened this morning, I'm sure the CEO knew that she wouldn't be there today and she definately should have called ahead of time. I would go ahead and take to your hubby's work to let them enjoy it and just tell the CEO nicely (you don't want to jeopardize your hubby's job) that you had already made the cake and you may can do a sheet cake for her if she wants, but that cake took a lot of time and you don't have the time to make it next week.

It may be that I haven't had enough coffee this am, but what is it supposed to be? It looks like an ultra-contemporary desk? Half a cinder block? A piece of bridge or roadway? An apparatus at a skate park? Whatever it is, it looks great lol !
Yeah, I hope these ideas work and that you're able to serve it to your hunny's boss. And that the boss chokes on a piece of it...just a little. Not a bad go-to-the-hospital choke. Just a pound-on-the-back-slobbering-embarrassing choke. All in good fun, of course!
Or you could just email that picture of the cake to the CEO with a simple message, "what should I do with this?"

Well, in THAT case....
Make a list of everything you'll need to remake the cake.
Hand list to your brownie-lovin' husband and include driving directions to the grocery store. He gets to pay for it.
Teach hubby how to make fondant, roll out fondant, and mix buttercream.
Rebake cake.
Sit back and have a beer (preferably with several loud belches, please) while hubby gets buttercream in his hair and cramps in his shoulders from the MMF.
When the cake is remade, drive hubby to your favorite restaurant and instruct him that it's his treat.
Order the lobster.

You guys are so funny! Thanks for the laughs! I needed them. It is an ingot. Which is a metal bar. This one is a magnesium ingot. But ingots come in all different metals. It's how they come out of the mold. Like I said, it's not a sexy cake, but it was a challenge. One piece of fondant that big is a pain in the @ss!
I guess I'll put it in a box and seal it up and hope for the best. My hubby did help a lot. He made one of the batches of icing and he made the RKT and he measured out some things for me. Now, if I can just get him to clean the kitchen!

In dire emergencies one can freeze a fondant cake, but it is more stressful when bringing up to room temp... it takes a long time and it is hard not to peek to make sure the process is going correctly. In the process of peeking, one tends to freak out as it looks wet and goopy until it fully runs its course of sweating and then evaporating its moisture. That is why any of the processes of having a cake return to room temp is best done inside a box... the box helps to absorb the excess moisture. I think you will be fine; but you might want to provide a disclaimer because of the delay --or you could simply tell the CEO that it jeopardizes the overall quality of the cake and offer to make a new one at her cost this time even though it might be protested by your husband.
Sorry that you have to go through this. I'm not sure if refridgeration or freezing is better. But freezing will keep the cake fresher. I would tried to freeze it and thaw it like the suggestion above and if the fondant fall of the cake all you have to do is to recover it (The RKT should be fine freezing) so your extra cost will only be just the MMF and the silver outside. Oh, make your husband knead the fondant
If it was either fridge or freezer, I'd opt for the freezer.
I've never had rkt last more than a day...don't they go stale after a couple of days anyway? I've successfully frozen mmf covered cakes. but like Win stated...it's the thawing that is most important and refraining from peeking an dfreaking out takes a lot of umph.
Your MMF fondant looks amazing. What recipe do you use? I would wrap it up. I know most cakes from scratch last a week in the fridge. Great cake.

I just had the same thing for my husbands boss. Was gifting an airplane cake for his birthday, then at the last moment decided that he wanted to fly out of town for the weekend. Asked for the cake a day earlier and then there was only a couple people in the office. So much for "advertising".
