Putting Fondant On Wedding Cake Day Prior Make It Too Hard?

I have a huge wedding cake i am delivering Saturday afternoon. It is to be covered in fondant (satin ice). It is just like the peony wedding cake I did (see photo), only 4 tiers instead of 3 (and will have a hydrangea instead of a peony).

I normally do cakes the day before the wedding (in case of problems, and so far have all been buttercream). However,... I have never covered an entire wedding cake in fondant a day early (peony was a styrofoam dummy).

I am in Nebraska, and it is humid... but, will it be rock hard by Saturday afternoon if I do it on Friday? Do i just need to do the fondant on the morning of the wedding?

I can do either one (just more stress if it's Saturday morn)

Thoughts????

I'm in SE Louisiana where it's reeeeeally humid, and I ALWAYS cover my cakes a day in advance. That way, I'm not rushing around the day the cake is due to get it covered and decorated. I cover my cake the day before, and do final decorations the day of. I've never had a problem. HTH!

I always cover my cakes a day ahead. I don't like the stress of that day decorating, especially if I have multiple cakes that day.

I am in PA and my cake designs can take days, so I may cover my cakes 2-3 days prior with no problems. The BC layer under the fondant helps to keep moist.

I have never had a problem covering the cakes in fondant the day before. I think the moisture from the buttercream helps to keep the fondant from hardening. You should be perfectly fine.

Never heard of it happening. I always cover my fondant cakes the day before. I'd never meet any deadlines if I didn't.

I'm also in Nebraska and I always cover my cakes a day ahead if not I would totally be going nuts! I have never had an issue as long as its in a cool dry place.

I would go ahead and cover it on Friday so that you don't have to worry about something going wrong. I am from Nebraska too...enjoying all this lovely humidity. I agree with others that the buttercream will keep it moist. The fondant will get firm on the outside, but will still be very moist on the inside. Good Luck!!!

Saturday deliveries definitely need to be finished Friday night. Go ahead and cover it.

I told you I'd post a pic... here it is. I had other challenges (fondant cracking, cake sagging, driving gravel road for delivery) but I was able to rescue it for the most part.

thanks. of course i see all the flaws.

it settled over night, after i had the fondant on! so trying to smooth it in the morning it cracked. Filled that with PS and just made the most of it. From now on I will let the cakes sit over night after i take them out of the freezer and fill them. Too much settling under the fondant!!!! it was all bulgy and saggy. Hid it with flowers LOL
