Does anyone have a moist red velvet cupcake recipe? All the ones I tried were dry....I have 220 cupcakes for a wedding next week?
I am doing Red Velvet for a Wedding in July so I starting testing some recipes. The best I have found is Paula Deen's. It is on the food network website. HTH

I doctor up a DH mix with an extra egg, pudding, and sour cream. Mine turns out moist everytime.
I use Paula deen's recipe too. It never comes out dry. It has 1 and 1/2 cups of oil in it. You have to be careful of the baking time 22 minutes. This recipe is the same as Cakeman Raven's
I make the Duncan Hines but bake at 325 for about 16 minutes- until just done. They are wonderful!
I use Cake Man Raven's recipe - definitely not dry. But I find with cupcakes, they're oily on the bottom. So I use 1/4 cup less oil, and add 1/4 cup of the buttermilk and they're perfect. I also use the better cupcake liners with red velvet so the oil doesn't collect on the bottom. People rave about these, and the ones who've ordered have all repeat ordered over and over.
