Ok, we finally got a digital camera, so I can post pictures. I posted one under wedding cakes. My first wedding cake and it was my own. You guys helped me a lot.

The reception hall was air conditioned, but there were so many people and they kept leaving the door open that it got hot in there. Eventually, things started falling off of it. I decided it was time to cut the cake! I only got the bite that Bryon fed me, but it was very good. Wish I had more.

Congrats on your marriage and cake.

It is a very pretty cake, you did a super job. Not many people have the memory of making their own cake to add to the normal wedding day memories.

Congratulations to you! And great job! I made my own wedding cake almost 5 years ago. I swore right up until 2 weeks before my wedding that I wouldn't do it, but when it came down to it I decided that I couldn't justify paying someone else a lot of $$ to make one. That and being as picky as I am, I didn't want to be disappointed if I wasn't happy with their work. It is very stressful, but can be rewarding too. My wedding photographer asked if I had business cards!! I wasn't ready to start a business of my own then, but now that I am, I'm going to call her up and send a bunch to her!! Well, just as soon as I figure out a name for the business anyway. icon_lol.gif

Your cake turned out perfect. icon_biggrin.gif I'm getting married next year and I'm trying to work up the nerve to make my own. I'm glad I have plenty of time to practice til then!!! Do you have any advice for me??

Daniela, I know you didn't ask me specifically, but I do have some advice for making your own wedding cake. Bake the cakes up to a month or so ahead of time and freeze them. I would also recommend making the icing a week or so ahead of time. Make sure you have all the supplies easily accessible and ready to go. Make sure you know exactly what you want your cake to look like, but also be ready to make last minute adjustments should something not work out as you want. Get as much done as you can before the night before your wedding. If you are anything like me, you probably won't be able to sleep well the night before your wedding anyway, but it would be nice not to have to stay up until the wee hours finishing your cake! Make arrangements if you are not staying at your own home, to finish decorating the cake wherever you end up staying and have all your supplies there. And lastly, find someone you trust with your life to transport and set up the cake at the reception if you will not be able to do it yourself (preferably another cake decorator if you know one) and give them specific instructions on how you want it. Hope this helps. Sorry for butting in! These are just a few lessons I learned after making mine.

I just read your question Daniella. I made all the royal icing petunias ahead of time and my sister and Wilton teacher helped me set the cake up. But I'll tell you I was totally stressed out because I ran out of time. If there's one thing you need to do it is allow yourself double the time you think you will need. After the cake was set up, I was much more relaxed. Also - if your wedding is in the summer, take into account the heat. There were so many people in the reception hall and they kept leaving the door open, so it got hot in there. When the flowers started falling off, I decided it was time to cut the cake. Good luck.

Congratulations Beecharmer ! Your cake was beautiful, you did a fantastic job ,you should be very proud.

Last summer I made three wedding cakes for my daughters wedding. I made the cakes and filled them and froze them for a few weeks. Then I took them out one at a time, let them defrost and frosted them with buttercream and decorated them.. I then refroze them.. I never refreeze things but I had practiced with another cake and it was fine.. The cakes were moist and tasted like I had just made them. My decorations on them were chocolate seashells and coral made with royal icing and everything froze and defrosted fine with no problems at all.. This way you don't have to wait till the last minute when you have so much other stuff to do , especially if you are making your own wedding cake.. I guess if you were using fondant you wouldn't be able to do this.

It's great when you can make your own wedding cake. That's how I started I don't like fruit cake so I wanted a sponge cake but I still wanted it to look like a traditional wedding cake. No one around here would do this. They all insisted I had to have fruit cake or sponge cake covered in buttercream. So I enrolled for classes, made my cake how I wanted it and have never looked back.
