How do I properly price my cakes out? I live in the NJ/NY metro area if that makes a difference. I also downloaded Alice's Cake Pricing Matrix and i dont understand how to use it. Some one please explain!!

Saw your thread when I was cruising the unanswered threads. I haven't used a matrix and don't sell my cakes but from my understanding the matrix gives you a method to input your actual costs of products. For example you will pay more for flour in NYC than I do in MN, so your location definitely makes a difference. The matrix lets you put in the prices and then it helps you figure out your actual costs for materials. You also need to add in what you pay for coloring, cardboards, boxes and those other things you need for your cakes. Then figure in the cost of electricity, transportation to get all your supplies and a whole list of other expenses. If you read through other threads on pricing you will find more detailed lists of things to include in your pricing. Then the other factor is what other places in your market get. Hope that helps a bit.
