I give the bride a copy of her invoice showing what she has already paid (deposit), when her next payment is due and how much money is due. Then once final payment has been made I email her a copy of her invoice showing the updated info.

I have Cake Boss software and creating invoices are very easy with it.

when I'm at a consultation I have a little receipt book that I write out a paper reciept (it has a carbon copy that stays in the book) and give that to the bride. then when I'm back home in front of my pc I use cake boss and email them an invoice showing the deposit and what else is due and when. Everytime they send me a payment I redo the invoice and email them a new copy showing what's been paid.

Yes, bride gets a copy and we have a copy for our records. Also, our contract has a little "ledger" space to keep tally of payments made.

not to sound snarky, but why wouldn't you give a bride a receipt for a payment made?
