I am doing a cake for a wedding 6 hours away this weekend and will be transporting the cakes there frozen and then doing everything else upon arrival. Our plan is to pack the frozen cakes in a foam cooler with dry ice but now I'm in worry mode and am wondering if the dry ice would make the cake taste funky. Has anyone had a similar experience they could offer some advice?
Thanks so much in advance!!!!
Chemically it shouldn't - it's just carbon dioxide. I'd just leave the cakes tightly wrapped in plastic wrap. If it keeps out air, it keeps out CO2. I'd vent the top just a bit too.
I'm transporting my daughter's wedding cake 6 hours too. I also thought about the dry ice. I have a problem trying to think of something large enough to transport the layers. If the cooler is sitting up, it would be too narrow. I thought about laying the cooler down. Any ideas?
