Hi, I was just wondering what everyone does when baking their cupcakes? I have noticed that when I bake my cupcakes (two 12 muffin) with the pans side by side they come out with the cupcake kinda slanted to one side. I have read that some bake just one pan at a time. Or some use 2 racks then rotate. What does everyone do? I have also noticed that the lean doesn't happen with every recipe just some, and it drives me crazy!

I have had the same thing happen with a few of my recipes. I believe it is caused by using a convection oven. In the oven there is a fan used to move the air and regulate temp. The fan is what blows the top of the cupcake over a bit. Usually I bake with 6 pans (a full oven) I rotate the cupcakes about 13 minutes in or just when it looks like the tops are starting to get formed enough that they wont fall when I turn the pans around. I find that the more pans in the oven the less they get the slant on the tops. I am guessing that is because it is harder for the air to move around the pans. I hope this helps! One of the best baking pans I ever bought was a 24 count no stick cupcake pan icon_lol.gif

It fits in my 2 home ovens perfectly and the cupcakes come out beautifully.

I have a double oven, so I bake them separate.
Do you have a convection oven?

Thanks! Now I can use one oven, and have one pan to clean. icon_wink.gif Okay, it'll be the same amount of area as two 12-cup pans, but in my head it will feel like less. icon_lol.gif

I use 2-12 cup pans one on each of the 2 racks and then put a 6 cup pan on one of the racks as well (usually the top rack), the muffin tin on the bottom rack gets a cookie sheet under it (to prevent the bottoms from getting too dark)

So I bake 28 cupcakes at a time. When I bake minies I use 2-24 cup pans, so I bake 48 of those at a time.

I don't rotate my pans or anything during cookie and they all come out great
