need help figuring this out

please. Customer emails and says she needs a cake that feeds 150 - dark chocolate almost fudge like cake with raspberry coulis to be drizzled on top once ready to be served... white icing. Square in shape and 4 tiers (top tier just for the groom and I - with chocolate covered strawberries is tux and dress on top) as for decor: simple. All white with a ribbon around the base of the tier.

Does that mean she takes the fourth or top tier home and I make up the 150 servings on the other 3 tiers? Or do I make 4 tiers and have another tier in a box for them? Would it be included in the price? I'm confused.

Yes, they usually keep the top tier and freeze it for their first anniversay. So, the next 3 tires down need to feed the rest of the guests.

So, I charge for the total # of servings. and figure cake so bottom 3 tiers feed all of the guests.

Hope this is what you mean

i've never made a wedding cake.. but i have heard of bakers charging for te total servings, then giving them the top tier as a gift.. so in this cake, they would only charge for the 3 teirs, then the top one is free.. not sure how many bakers really do this, but i know a few around my area that doh

as far as i know the servings are from everything minus the top tier, it really depends on if they want to keep the top tier for themselves, i've known of a couple brides who don't like the idea of year-long frozen cake, myself included. So i would think it would be everything but the top tier, especially if the top tier is pretty small.

does that mean that the 4th tier goes on the cake too? I think so. Do you know if the 4th tier has just buttercream filling or the same fillings as the rest of the cakes?

Hi, I'm only new to decorating but I would think that it is a 4 tier cake and the kitchen staff at the venue removes the top tier before serving the other three tiers (these three would make up the 150 serves). I would also charge for all 4 tiers, I live in country NSW Australia and the going rate for wedding cakes is $150.00 (AUD) per tier dosn't matter what size the cakes are, so a 4 tier would be $600.00 (AUD). We don't get anywhere near the prices like Sydney, people just wont pay it out here...This price includes the cake iced, stacked and the boards. Does not include any decorations or pillars they are costed separately depending on what the bride wants. Hope this helps.........

For me I always give a 4' round (I know I am smaller than most who give 6" rounds) for an anniversary tier. I box it up for the Bride & Groom for them to take home & freeze. but some eat it on their honeymoon or that night.

Some designers also give a free anniversary tier on the actual anniversary that way it's not frozen but made freah a year later.... We move too much so that is not an option for me.

If she wants a 150 servings this should be minus the anniversary tier.
You can put the extra tier on if you'd like.. but be sure it fits the design & the cake cutter knows it's the anniversary tier for the bride & groom; not to be served.
