I am VERY new to cake decorating and don't have a lot of experience.
I was asked by a friend to make her 25th birthday cake, which I am very excited about.

She said she wanted a vanilla cake with chocolate buttercream filling and covered in fondant.

I found a recipe posted by someone on this site that sounded amazing and I want to try it out. My only concern is I'm not sure if the cake is good to cover in fondant? Will it be too heavy?
The recipe is Vanilla Butter Cake from The Mermaid Bakery...has anyone made this? Is it a good cake to cover in fondant?
I'm going to make a basic buttercream recipe and add half of my choclate ganache recipe to the filling to make it tasty.

I'd appeciate any and all advice.
Thanks
Victoria

Can anyone help me out? Or suggest a good white cake recipe that works well covered in fondant?

Thanks again

Just looked it up and it says it's easy to carve so it should hold up to fondant also. I've used WASC cakes and durable white and chocolate cakes and covered in fondant with no problem. (Durable white/choc. recipe in the recipe section)

I think you want a cake that sets up good and wouldn't be crumbly under the weight of the fondant. I've used pound cakes or other scratch made cakes that are a little lighter than a pound cake and they work fine. I've also used boxed mix.

I have tried wasc, mermaid bakery vanilla and many more. The one I find the best is called "durable cake for 3d and wedding cakes" It is on the top 4 if you look up the most saved recipes on this site.
It tastes soooo good and stacks very well.HTH

Krista did you cover the mermaid bakery vanilla cake in fondant?
I took a look at the durable cake for 3d and wedding cakes and I def will use that in the future. The only request my friend made was to have the white cake baked from scratch.

We're celebrating my daughters first birthday this saturday so I might do a run through with the mermaid vanilla cake and see how it goes.

Thanks for all the help!

I know everybody gives the mermaid bakery one good reviews, however I ended up not using the cake once it was baked.
It was sunk in the middle, and was too dense for my liking. It was a really heavy pound cake idea.
